Crawfish Etouffee
Ingredients:
1/2 cup of chopped onions
1 cup of chopped green onions
1 cup of chopped celery
1/4 pound of oleo
3 tablespoons of flour
1 can of chicken broth
1 pound of crawfisd tails
2 teaspoons of paprika
Green onion tops, chopped
Parsley, chopped
Salt, black pepper and red pepper to taste.

Cooking Instructions:
1.    Saute onions and celery in oleo until wilted.  Add flour and cook, but do not brown.
2.    Add chicken broth; simmer 20 minutes.
3.    Add crawfish tails, salt, pepper and paprika; simmer for 20 minutes more.
4.    Before serving, add onion tops and parsley.
